Some Like it Hot

It has been a wonderful trip. A very long flight there and back, and while I enjoyed being in Michigan I an so very glad to be home in California.

Here is a side road we took, and what can I say but I like road pictures.

Here is a not so great photograph of some horses. They were running earlier and trying to get a photograph while in the car is quite trying!

It would have been more than one photograph but I don’t have reliable internet connection here. I will try to get more uploaded as soon as possbile.

It is beautiful here in Michigan, and I wish you could see the things that I have. I am speechless when I see deer, wild turkies, and wild rabbits, roaming around the back yard.

I am now moved from central Michigan into the Upper Peninsula or as Michigummian calls the The Yoopers. If you get a chance to come and visit do so, and enjoy the beauty!

I am busy celebrating and I just wanted to wish all of you United Statesians a Happy 4th!

The slight mad gleam in my husbands eyes gave me a second pause, but then there are worst things to be addicted to than Battlestar Galatica series, the new one.
Now you fans of the older series don’t get us wrong we like the old series too, but the new series has its charms and nail biters. Anyways my husband is addicted, and I am somewhat taken (really I can quit anytime…), and I love how the characters are evolving, and multifaceted. Wait I am supposed to be talking about food today so, here it goes.

 

Boomer’s Kimchi Omelet as Made By DH 

 

 

This is called Boomer’s Kimchi Omelet because you never know when it will come back and bite you…Really you would kind of understand if you watched the series…

2 cups kimchi

3 tablespoons of sesame oil

1 1/2 cups of white steamed rice that is a day old and cold

1/2 lime

1 tsp EVOO

In a skillet place sesame oil till the pan is hot add the kimchi and stir fry for about 5 minutes. Add the rice and stir fry with the kimchi for another 2-3 minutes. Squeeze the lime into kimchi rice mixture mix well. In another skillet for the omelet, add the EVOO and heat the pan, make the omelet using:

3/4 Cup rice kimchi mixture

1/2 Cup egg beaters (or use 2 eggs beaten)

black pepper to taste (lots of black pepper)

And before plating sing the fraggle Rock theme song and dance. Serve with ketchup, and enjoy!

There are no directions to make the omelet dear friends as DH makes the omelets in this house as it is something I have not mastered

Now I know the pictures of the omelets do not look tasty but let me tell you that it is quite delicious! The salty kimchi is tempered by the rice, and the eggs. The sweetness of the ketchup is a nice foil for the kimchi and sesame oil,
